0031. Spanish Sausage Supper
- 1/2 (cup) chopped green pepper
- 1/4 (cup) chopped onion
- 1 (tablespoon) vegetable oil
- 1 (pound) fully cooked smoked sausage, sliced
- 2 (cup) water
- 1 (10.0 ounce) can diced tomatoes and green chilies, undrained
- 1 (6.8 ounce package) Spanish rice mix
- 1/8 (teaspoon) pepper
- In a large skillet, saute green pepper, and onion in oil until tender. Add remaining ingredients (including the seasoning packet from the Spanish rice mix); mix well. Cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed, stirring occasionally.
